Turkish menemen with beef sucuk and fresh flatbread
Turkish menemen with beef sucuk and fresh flatbread: a well-seasoned egg pan with tomatoes, peppers, onion, parsley and crispy sucuk straight from the pan.
Slice the sucuk thinly and fry in a large frying pan without extra fat until lightly crispy. Then remove and set aside.
Finely dice the onion, cut the peppers into small pieces and soften both in the fat from the sucuk over a medium heat.
Roughly dice the tomatoes and add to the pan with the paprika, chilli flakes and a little salt. Simmer until the mixture is thick and fragrant.
Crack the eggs straight into the pan and only roughly stir them into the tomato sauce so larger, soft pieces remain. Let them set over a low heat until the eggs are just creamy (in pregnancy, cook until firm).
Return the fried sucuk to the pan and warm through briefly. Sprinkle with freshly chopped parsley.
Serve straight from the pan with fresh flatbread.
Good to know
Menemen is one of those meals that instantly tastes like home. Warm, well spiced, simple – and best brought straight from the pan to the table.
Swaps
Sucuk → beef mince with garlic and cumin (you control the salt yourself; similarly hearty) | Flatbread → sourdough bread (often fermented for longer; also contains gluten) | Onion → spring onion (milder in flavour) | Olive oil → ghee (heat-stable and aromatic; contains milk)
Allergens
Contains egg; the flatbread contains gluten, and sucuk can contain other allergens depending on the producer. For children, keep the spices mild; in pregnancy, cook the eggs until firm and heat the sucuk right through.
