Ingredients
350g turkey breast
3 large courgettes
1 garlic clove
100g cherry tomatoes
20g pine nuts
1 tbsp olive oil
Salt, black pepper
Fresh basil
3 tbsp green pesto (basil, made with olive oil, no seed oils)
Cut the courgettes into long noodles with a spiraliser or vegetable peeler. Cut the turkey breast into thin strips and season with salt and black pepper.
Heat the olive oil in a large frying pan and fry the turkey strips until golden brown all over and cooked right through. Then take out of the pan and set aside briefly.
Finely chop the garlic and fry briefly in the same pan with the cherry tomatoes until fragrant and the tomatoes start to burst.
Add the courgette noodles and warm them only briefly so they keep some bite. Fold in the green pesto and the fried turkey strips and toss everything loosely.
Toast the pine nuts briefly in a dry pan if you like, until lightly fragrant. Roughly tear the fresh basil.
Arrange on plates and serve with the pine nuts and fresh basil.
Good to know
When it needs to be quick but should still taste fresh, this dish is just right. Juicy, green and bright – without ever being boring.
Swaps
Turkey breast → chicken breast (similar protein content and mild), pine nuts → walnuts (more omega-3 fatty acids; contains tree nuts), green pesto → homemade basil and olive oil pesto (often fewer additives), courgette noodles → cucumber and courgette mix (even fresher, with a higher water content)
Allergens
Contains milk (pesto) and pine nuts, which some people react to; depending on the pesto, it may also contain tree nuts. Good for children if the meat is cut small, and in pregnancy it's fine as long as the turkey is cooked right through.
