Ingredients
250g organic turkey breast fillet
1 nicely ripe avocado half
10 small cherry tomatoes
1 huge handful of mixed salad leaves
1 tbsp cloudy apple cider vinegar
1 tbsp organic wholegrain mustard (unsweetened)
1 tsp virgin olive oil
Method
You’ll need: chopping board · knife · mixing bowl
Wash the salad leaves and cherry tomatoes thoroughly and spin them dry. Only prepare the avocado shortly before serving.
Pat the turkey breast dry, cut it into pieces and cook it in the olive oil over a medium heat until golden brown all over. Season with salt and pepper and leave to cool briefly.
Halve the cherry tomatoes, put the salad leaves in a large bowl and cut the avocado into bite-sized pieces.
For the dressing, stir the apple cider vinegar with the wholegrain mustard, a little honey, salt and pepper. Pour the dressing over the salad leaves, cherry tomatoes and avocado and toss gently.
Fold in the fried turkey breast or arrange it on top. Leave the salad to stand briefly so the flavours come together.
Arrange on plates and serve straight away.
Good to know
A salad like this tastes like a proper meal. Fresh, creamy and savoury, all in good balance.
Swaps
Turkey breast → chicken breast (similar protein content) | Avocado → cucumber (fresh and juicy) | Cherry tomatoes → pepper (also provides vitamin C) | Olive oil → avocado oil (mild, mainly monounsaturated fatty acids)
Allergens
The recipe contains mustard as an allergen. For children, go easy on the mustard, cook the turkey breast right through and no honey for babies under one year old; in pregnancy, too, only use fully cooked turkey and wash the salad leaves especially carefully.
