Ingredients
300 g turkey breast
2 courgettes
100 g feta
1 red onion
2 tbsp olive oil
1 tsp oregano
Method
You’ll need: frying pan · chopping board · knife
Cut the turkey breast into thin strips. Wash the courgettes and cut into half-moons; peel the red onion and slice into half rings.
Heat the olive oil in a large frying pan. Fry the turkey strips all over until lightly browned.
Add the courgettes and red onion to the pan. Fry briefly until the vegetables are soft but still have some bite.
Sprinkle over the oregano and mix well. Crumble the feta roughly over the top and let it warm through briefly.
Season to taste with a pinch of salt and a little pepper. Serve straight from the pan.
Good to know
When you want something uncomplicated that still tastes really good, this pan-fry is just right. Hearty, juicy and on the table in no time.
Swaps
Turkey breast → chicken breast (similar protein content), feta → goat's cheese (a little stronger in flavour, also provides calcium; in pregnancy, use one made from pasteurised milk), courgette → aubergine (also provides fibre), olive oil → ghee (heat-stable for frying)
Allergens
Contains milk (feta). Usually fine for children if mildly seasoned and cut into suitable pieces, and in pregnancy feta is only suitable if it's made from pasteurised milk.
