You’ll need: oven · frying pan · chopping board · knife · mixing bowl

  1. Wash the cucumber, rocket and red pepper. Cut the cucumber and pepper into thin strips or small pieces.
  2. Stir the hummus with the lemon juice in a small bowl until smooth. Season with salt and pepper.
  3. Warm the wholemeal wraps briefly in a dry frying pan or in the oven so they soften.
  4. Spread the wraps with the lemon hummus. Top with the turkey breast slices, cucumber, rocket and pepper.
  5. Fold in the sides slightly and roll the wraps up tightly. Halve them diagonally if you like.
  6. Serve fresh and eat straight away, while the wraps are juicy and crunchy.

Good to know

When you need something quick, these wraps are worth their weight in gold. Fresh, creamy and pleasantly filling. Just right for a lunch break or a light dinner.

Swaps

Sliced turkey breast → pan-fried chicken breast (less processed, similar protein content); wholemeal wraps → large romaine lettuce leaves (crunchier, with fewer carbs); hummus → mashed avocado with lemon juice (provides monounsaturated fatty acids and fibre); rocket → baby spinach (milder flavour, also with folate)

Allergens

The wraps may contain gluten and the hummus sesame; mild seasoning makes sense for children, and during pregnancy make sure the sliced turkey is well chilled and freshly opened. Contains: gluten, sesame.
