Ingredients
150g cherry tomatoes
125g mini mozzarella balls
Wooden skewers
1 tbsp good extra virgin olive oil
Salt and freshly ground black pepper
A few fresh basil leaves
Method
You’ll need: sieve
Wash the cherry tomatoes and dry them well. Drain the mini mozzarella and carefully wash the basil.
Soak the wooden skewers in water briefly so they stay more flexible. Tear the basil leaves into smaller pieces if needed.
Thread the cherry tomatoes, mini mozzarella and basil alternately onto the wooden skewers. Work gently so the ingredients don't get squashed.
Lay the finished skewers on a platter and drizzle with olive oil. Season with salt and ground black pepper.
Leave the skewers for a few minutes so the flavours come together. Only lay the basil on top at the very end so it stays fresh.
Serve straight away, while the tomatoes, mozzarella and basil are still nice and cool and juicy.
Good to know
Sometimes the simplest things are the best. These skewers are fresh, uncomplicated and just right when you want something tasty, fast.
Swaps
Mini mozzarella → buffalo mozzarella (a little more calcium, depending on the product; also provides protein) | Basil → rocket (more bitter notes, also contains folate) | Cherry tomatoes → mixed baby plum tomatoes (similar nutrients, often a little sweeter) | Olive oil → avocado oil (milder flavour, also mainly monounsaturated fatty acids)
Allergens
Contains milk (mozzarella). Good for children if the skewers are served in an age-appropriate way or the ingredients are cut small; in pregnancy, use mozzarella made from pasteurised milk.
