Ingredients

Method

You’ll need: oven · frying pan · stick blender · chopping board · knife · sieve

  1. Drain the chickpeas, dry them well and toss with olive oil and curry powder. Roast in the oven or in a frying pan until golden brown and slightly crispy.
  2. Finely chop the garlic and sweat it briefly in olive oil with the tomato purée and curry paste. This makes the flavours deeper and rounder.
  3. Add the chopped tomatoes and coconut milk and simmer everything gently for a few minutes. The soup should thicken slightly but still be pourable.
  4. Blend the soup until smooth or leave it chunky, whichever you prefer. Season with chopped coriander.
  5. If it's too thick, add a little water and stir briefly. Taste once more and adjust the seasoning.
  6. Ladle into bowls and top with the roasted chickpeas. Serve with a little coriander.

Good to know

This soup is warm, creamy and pleasantly spicy. It looks simple but tastes far more rounded than the short ingredient list would suggest.

Swaps

Coriander → parsley (milder, also provides vitamin K). Curry paste → mild curry powder with a little ginger (often milder). Coconut milk → cashew butter plus water (a little more protein, if it agrees with you). Chickpeas → white beans (similar fibre content, slightly softer texture).

Allergens

Depending on the curry paste, it may contain allergens. Coconut is usually well tolerated and isn't one of the classic tree-nut allergens in the EU. For children or during pregnancy, the main thing to watch is the heat of the curry paste.
