Ingredients
1 sweet potato, as evenly shaped as possible
50g cottage cheese
50g smoked salmon
1/2 avocado
1 squeeze of lemon juice
1 tsp sesame seeds
1 pinch of salt
Method
You’ll need: chopping board · knife
Scrub the sweet potato well, cut off the ends and slice it lengthways into even slices. They shouldn't be too thin or too thick, so they cook through in the toaster.
Put the raw sweet potato slices in the toaster and toast on a high setting. Repeat if needed until they're lightly browned and soft enough inside to pierce.
Meanwhile, slice the avocado and drizzle with a little lemon juice. This keeps it fresh and gives it a slight tang.
Spread the hot sweet potato slices with cottage cheese. Then lay the smoked salmon on top and add the avocado.
Finish with sesame seeds and a small pinch of salt. Serve straight away while the sweet potato is still warm.
Good to know
When you fancy something savoury but without classic bread, this is a really good solution. Warm, creamy, fresh – and on the plate in a few minutes.
Swaps
Smoked salmon → oven-baked trout (also provides protein and omega-3 fatty acids). Cottage cheese → plain soft goat's cheese (a little creamier, also contains protein; in pregnancy, use one made from pasteurised milk). Sesame seeds → chopped walnuts (also provide omega-3 fatty acids; contain tree nuts). Sweet potato → roasted aubergine slices (also provide fibre).
Allergens
Contains milk, fish and sesame. For children, only serve in suitably small, soft pieces. In pregnancy, leave out the smoked salmon, as it isn't heated here.
