Ingredients
300g wild salmon
400g broccoli
1 tbsp honey
1 clove of garlic
1 tbsp sesame seeds
1 tbsp coconut oil
1 pinch of salt
3 tbsp soy sauce
Method
You’ll need: frying pan · sieve · spatula
Crush the garlic finely and stir it with the soy sauce and honey into a smooth marinade.
Pat the salmon dry, put it in the marinade and leave it briefly so it takes on the flavour.
Divide the broccoli into florets and cook in lightly salted water until tender-crisp. Then drain well.
Heat the coconut oil in a frying pan and fry the marinated salmon skin-side down first. Turn it over and finish cooking on the second side.
Add the remaining marinade to the pan and let it reduce briefly until it coats the salmon in a glossy glaze.
Serve the salmon with the broccoli and sprinkle with sesame seeds.
Good to know
When it needs to be quick but should still taste like a proper meal, this dish is just right. Savoury, juicy and pleasantly uncomplicated.
Swaps
Honey → date paste (slightly less free sugar, fruity sweetness); soy sauce → tamari (gluten-free alternative with a similar taste); coconut oil → olive oil (more monounsaturated fatty acids); broccoli → pak choi (mild, light and also plenty of veg)
Allergens
Contains fish, soya and sesame as classic allergens; suits children well if you go easy on the sesame, and during pregnancy well-cooked salmon is usually the safe choice. Contains: gluten (soy sauce).
