Ingredients
400 g sirloin steak
150 g rocket
150 g cherry tomatoes
40 g parmesan
2 tbsp olive oil
1 tbsp balsamic vinegar
Method
You’ll need: frying pan · chopping board · knife
Take the sirloin steak out of the fridge in good time. Wash the rocket and dry it well; halve the cherry tomatoes.
Heat a heavy frying pan until very hot and sear the sirloin steak briefly and hard on both sides until it's done to your liking.
Take the steak out of the pan and leave it to rest for a few minutes so the juices settle.
Arrange the rocket and cherry tomatoes on plates. Stir the olive oil with the balsamic vinegar, salt and pepper and pour over the salad.
Cut the sirloin steak across the grain into thin strips and lay them on the rocket. Shave the parmesan coarsely over the top.
Serve straight away and finish with a little coarse sea salt.
Good to know
When you want something uncomplicated that still tastes like a really good meal, this dish is just right. Warm steak on fresh salad simply works.
Swaps
Sirloin steak → rump steak (usually a little leaner) | parmesan → pecorino made from sheep's milk (stronger flavour, similar protein content) | rocket → lamb's lettuce (milder, also provides folate) | balsamic vinegar → lemon juice (fresher and sharper)
Allergens
Contains milk (parmesan). For children, it's better to cook the steak through well; in pregnancy, cook the beef right through – parmesan, as a long-aged hard cheese, is fine.
