Sweet potato and chickpea bowl with quinoa, baby spinach and tahini: a spicy bowl with a creamy dressing, a hint of lemon and well-balanced ingredients.
You’ll need: oven · saucepan · chopping board · knife · mixing bowl · sieve
A bowl like this is pure comfort. Warm, creamy, spicy – and pleasantly uncomplicated. Just right when you want something satisfying with a fresh character.
Chickpeas → white beans (milder flavour, with fibre) Quinoa → millet (gluten-free, mild and hearty) Maple syrup → date paste (natural sweetness with a little more fibre) Tahini → almond butter (creamy, contains no seed oils)
This bowl contains sesame from the tahini. Chickpeas and other high-fibre ingredients can be quite a lot for sensitive children's tummies at first, and during pregnancy it's fine with well-washed spinach and thoroughly cooked ingredients.
Sweet potatoes mainly provide complex carbohydrates and beta-carotene, the precursor of vitamin A. They also contain potassium and smaller amounts of vitamin C.
That varies from person to person: chickpeas contain fibre and certain fermentable carbohydrates that can cause wind in some people. Rinsing them thoroughly often helps a little, but you can't always avoid it completely.
Tahini mainly provides fat from sesame, along with calcium, magnesium, iron and a little protein. The amounts can vary noticeably depending on the product.
Spinach contains oxalic acid. In a mixed meal like this it's usually nothing to worry about, but if you're very sensitive or have specific medical advice, it's worth taking a closer look.
Quinoa provides carbohydrates, fibre and some protein, as well as minerals such as manganese and magnesium. Botanically it isn't a classic grain, and its nutritional values vary slightly by variety.
