Swabian apple and plum bread pudding with spelt rolls
Swabian apple and plum bread pudding made with spelt rolls, apples, plums and a cinnamon egg custard. Family-friendly, a good way to use up leftover bread, and a proper pudding.
Preheat the oven to 180 °C (160 °C fan) and grease a baking dish with a little of the butter.
Cut the spelt rolls into 1 cm slices. Quarter and core the apples and cut them into wedges. Halve and stone the plums.
Layer the bread slices, apple wedges and plums in the dish, overlapping like roof tiles.
Scrape the seeds out of the vanilla pod. Whisk the eggs, milk, coconut sugar, vanilla seeds, cinnamon and salt and pour the custard over the bread. Leave it all to soak for 10 minutes.
Scatter the slivered almonds and the rest of the butter in small pieces over the top. Bake the pudding at 180 °C for 35 to 40 minutes, until the custard has set and the top is golden brown.
Leave it to rest for 5 minutes and serve warm.
Good to know
This Swabian bread pudding is the answer to stale bread: rolls, fruit and egg custard, set in the oven. With apples and plums, it tastes of autumn.
