Sunken baked apple cake with almonds and raisins
Sunken baked apple cake: apple halves filled with almonds, raisins and cinnamon and baked in a batter of spelt flour, honey and yoghurt. A family-friendly dessert.
Preheat the oven to 180 °C (160 °C fan) and grease a 26 cm springform tin with a little of the butter.
Peel and halve the apples and generously remove the cores. Roughly chop the almonds and mix them with the raisins and cinnamon.
Beat the rest of the butter with the honey until creamy, beat in the eggs one at a time and add the grated lemon zest.
Mix the spelt flour, baking powder and salt and stir it in alternately with the yoghurt. Spread the batter in the tin.
Fill the apple halves with the almond mixture and press them into the batter, filling side up. Bake the cake for 45 to 50 minutes.
Leave the cake to cool in the tin for 15 minutes, release the side and serve it lukewarm.
Good to know
A sunken apple cake in which every apple half is filled like a little baked apple. Almonds, raisins and cinnamon sit in the middle and toast as the cake bakes. Lukewarm with a spoonful of yoghurt, it's a dessert for a Sunday in Advent.
