Ingredients

Method

You’ll need: stick blender · chopping board · knife

  1. Finely purée half of the strawberries and cut the remaining half into thin slices.
  2. Whisk the low-fat quark with the maple syrup and 2 tbsp cold water until smooth and spreadable.
  3. Roughly crumble the dry oat cookies and drizzle them with the cold espresso on a plate.
  4. Layer the soaked cookie crumbs, strawberry purée, whipped quark and the sliced strawberries alternately in glasses.
  5. Chill the tiramisu and dust it with bitter cocoa powder before eating.

Good to know

Goodbye mascarpone! With a whipped Italian twist, we bring strawberries and quark together in a sensational creamy layer.

Swaps

Low-fat quark → soya yoghurt alternative (to make a vegan version; contains soya). Espresso → not-from-concentrate orange juice (for a caffeine-free version).

Cooking tips

A hint of Bourbon vanilla in the quark gives the whole dessert glass a refined, patisserie-style depth.

Storage

The oat cookies soften a lot as they chill – after three hours of waiting, that soft texture is exactly what you want.

Allergens

Contains gluten (oats) and milk (lactose). In pregnancy, count the espresso towards your daily caffeine limit or use the orange juice swap.
