Strawberry baked oats with banana, strawberries, rolled oats and almond milk: a fruity oven-baked breakfast with a gentle sweetness, cinnamon and a soft, moist texture.
You’ll need: oven · mixing bowl
This little bake is simple, fruity and pleasantly soft. Warm from the oven, it's part breakfast, part dessert. Just right for days when you want to keep things easy.
½ banana → 80 g apple purée made from apples only (fewer free sugars, more volume with similar binding) 100 ml almond milk → 100 ml unsweetened coconut milk drink from a carton (usually fewer additives, no seed oil) 1 tsp maple syrup/honey → 1–2 tsp date paste (more potassium and a little fibre) ½ tsp coconut oil → 1 tsp almond butter or cashew butter (more unsaturated fatty acids, a little protein and minerals)
Contains oats and almonds; if you have coeliac disease, only use oats clearly labelled gluten-free. Usually well suited to children, but honey should never go into food for babies under 12 months; during pregnancy, the ingredients are unremarkable in normal amounts.
Oats provide both soluble and insoluble fibre, including beta-glucans. These are typical of oats and also contribute to the creamy texture.
Strawberries are especially known for their vitamin C content. They also contain polyphenols and smaller amounts of folate and potassium.
Banana provides not just natural sweetness but also potassium and some vitamin B6. The riper it is, the milder and sweeter the bake tastes.
That depends on the person and the product. Almond milk isn't suitable if you have a nut allergy, and some brands contain additives such as gellan or guar gum, which sensitive people don't always tolerate well.
Cinnamon contains aromatic plant compounds and small amounts of minerals, but it's only used in a very small amount here. Overall, it's mainly a spice for flavour and aroma.
