Stollen waffles made with spelt flour and ground almonds, with raisins, orange zest, cardamom and honey, served with yoghurt. A family-friendly Advent breakfast that tastes like Christstollen.
You’ll need: frying pan · waffle iron · mixing bowl · sieve · grater
Stollen for breakfast – but fresh from the waffle iron. The batter gets cardamom, nutmeg, orange zest and ground almonds, and the raisins soak in hot water first. That way the waffles taste like Christstollen without waiting for a yeast dough to rise.
Spelt flour → wholemeal spelt flour (more fibre, 50 ml more milk). Honey → maple syrup. Raisins → chopped soft dried apricots. Natural yoghurt → skyr (more protein).
Only stir the batter until no more flour is visible, so the waffles turn out light. Finished waffles stay crisp on a wire rack but go soft when stacked.
Once cooled, they keep for 2 days in the fridge or 2 months in the freezer; crisp them up in the toaster.
Contains gluten (spelt), egg, milk and almonds. Suitable for children; fine during pregnancy because the eggs are cooked through.
