St Nicholas pancakes made with quark, spelt flour and egg, with warm mandarins, honey and toasted hazelnuts. A family-friendly breakfast for St Nicholas morning on 6 December.
You’ll need: frying pan · chopping board · knife · grater
Mandarins and nuts belong in every St Nicholas boot. Here they land warm on small quark pancakes, with the hazelnuts briefly toasted first. The children can peel the mandarins.
Spelt flour → finely ground oats. Low-fat quark → skyr. Honey → maple syrup. Mandarins → clementines or orange segments.
The batter is thicker than pancake batter, so spread it out a little with the back of a spoon. Only flip the pancakes when bubbles rise at the edges.
The pancakes keep for 2 days in the fridge or 2 months in the freezer – crisp them up in the toaster; warm the mandarins fresh.
Contains gluten (spelt), egg, milk and hazelnuts. Suitable for children; fine during pregnancy if the pancakes are cooked through.
