You’ll need: blender · chopping board · knife

  1. Halve the avocados, remove the stones and put the flesh in a blender with the banana, maple syrup, oat milk, salt and most of the cocoa powder.
  2. Blend everything for 1 minute into a smooth mousse and chill for 15 minutes.
  3. Stone the dates and blitz them in the blender with the walnuts and the rest of the cocoa powder into crumbs.
  4. Break the crispbread into 8 long pieces for the gravestones.
  5. Spoon the mousse into four glasses and scatter the date soil over the top.
  6. Push two crispbread gravestones into the soil in each glass and serve the cups chilled.

Good to know

A little graveyard in a glass: chocolate mousse at the bottom, soil made from dates, walnuts and cocoa on top, and crispbread gravestones stuck in it. The mousse is blended from avocado and banana. Nobody can taste the avocado.

Swaps

Oat milk → almond milk. Maple syrup → 2 more dates. Walnuts → hazelnuts. Crispbread → rice cakes (gluten-free; use gluten-free oat milk too).

Cooking tips

The avocados need to be ripe, otherwise the mousse won't be smooth. The longer it chills, the firmer it gets.

Storage

The mousse keeps for 1 day covered in the fridge; add the soil and gravestones just before serving.

Allergens

Vegan, no milk or egg; contains walnuts and gluten (rye crispbread, and oats in the oat milk unless labelled gluten-free). Cocoa contains a little caffeine; fine for children and in pregnancy in this amount.
