Spider eggs with yoghurt and mustard filling and olives
Spider eggs: boiled eggs dyed in beetroot juice, filled with yoghurt and mustard cream, topped with olive spiders. Vegetarian Halloween snacks, 2 g carbs.
Boil the eggs for 10 minutes, refresh them in cold water and peel them.
Mix the beetroot juice and apple cider vinegar in a jar, add the eggs and leave them in the fridge for 30 minutes until the egg whites are pink on the outside.
Halve the eggs lengthways, scoop out the egg yolks and mash them with the yoghurt, mustard, turmeric, salt and pepper into a smooth cream.
Fill the egg white halves with the cream using a teaspoon or piping bag.
Halve the black olives lengthways. Put one half on each egg as the body and cut the remaining halves into thin strips for the legs.
Arrange four legs on each side of the body, scatter over the chives and serve the spider eggs chilled.
Good to know
Stuffed eggs belong on every buffet – and at Halloween, an olive spider crawls on top. The beetroot juice turns the whites pink. You mix the filling with yoghurt and mustard instead of mayonnaise.
Swaps
Greek yoghurt → skyr. Beetroot juice → water with turmeric (yellow eggs). Olives → Kalamata olives. Mustard → horseradish (hotter).
Cooking tips
Eggs that are a few days old are easier to peel after boiling. The longer they sit in the beetroot juice, the stronger the colour.
Storage
Filled and covered, they keep for 1 day in the fridge; put the olive spiders on just before serving.
