Method

You’ll need: saucepan · blender · milk frother · chopping board · knife · sieve · wooden spoon

  1. Cook the diced Hokkaido squash, covered, in a little water for 10 minutes until soft, then drain.
  2. Blend the squash with the oat milk, maple syrup, cinnamon, nutmeg, ginger and cloves until smooth.
  3. Heat the pumpkin milk in a pan, stirring, until it steams but doesn't boil.
  4. Brew the espresso and divide it between two mugs.
  5. Froth the pumpkin milk with a milk frother, pour it over the espresso and dust with a little cinnamon.

Good to know

The pumpkin spice latte from the café is mostly syrup and cream. This one has actual pumpkin in it, plus cinnamon, nutmeg, ginger and cloves and a little maple syrup. With oat milk it's vegan and froths up nicely.

Swaps

Oat milk → milk (no longer vegan). Espresso → rooibos tea (caffeine-free). Maple syrup → 1 date. Hokkaido squash → butternut squash.

Cooking tips

Blend the squash for long enough, or you'll get fibres in your mug. Barista oat milk gives the most stable froth.

Storage

The pumpkin milk without espresso keeps for 2 days in the fridge; shake before heating.

Allergens

Vegan, no milk, egg or nuts; contains gluten (oats in the oat milk) unless the oat milk is labelled gluten-free. Espresso contains caffeine; in pregnancy, have no more than 200 mg of caffeine a day, and leave out the espresso for children.
