Ingredients

Method

You’ll need: frying pan · chopping board · knife · wooden spoon

  1. Finely dice the onion and cut the pepper into small pieces.
  2. Heat the olive oil in a deep frying pan. Fry the beef mince with the onion until crumbly and browned.
  3. Add the pepper and cumin and fry briefly so the spices release their aroma.
  4. Add the bulgur, passata and water to the pan. Stir everything thoroughly and bring to the boil.
  5. Cover the pan and cook over a medium heat until the bulgur is soft and has absorbed the liquid. Season to taste with sea salt and black pepper.
  6. Serve hot and enjoy straight from the pan.

Good to know

A meal like this makes the evening easier. Warm, well spiced and hearty, without much effort. One pan, not much washing-up, plenty of flavour.

Swaps

Bulgur → quinoa (naturally gluten-free, a little more protein). Beef mince → turkey mince (also provides protein). Pepper → courgette (milder). Olive oil → ghee (heat-stable and aromatic; contains milk, so not dairy-free).

Allergens

Contains gluten (bulgur). Easy to season mildly for children; in pregnancy it's fine as long as the beef mince is cooked right through and all ingredients are fresh and handled with good kitchen hygiene.
