Spelt witch's fingers with almond nails and raspberries
Witch's fingers made from spelt shortcrust pastry with almond flour, sweetened with honey, with whole almonds for fingernails and raspberry purée. Family-friendly snacks for the Halloween buffet.
Quickly knead the spelt flour, almond flour, cold butter in pieces, honey, egg and salt into a smooth dough, then cover and chill for 30 minutes.
Preheat the oven to 180 °C (160 °C fan). Divide the dough into 24 pieces and roll each into a finger-thick rope about 8 cm long.
Pinch each rope slightly in two places for the knuckles and score wrinkles into it with a knife. Press an almond into one end as a fingernail.
Place the fingers on a baking tray lined with baking paper and bake at 180 °C for 12 to 15 minutes, until light brown at the edges.
Purée the raspberries and push the purée through a sieve.
Leave the witch's fingers to cool, lift the almonds briefly, dab a little raspberry purée underneath and put them back.
Good to know
Witch's fingers belong on every Halloween buffet: crooked dough fingers with wrinkled knuckles and an almond for a nail. Raspberry purée oozes out from underneath. The shortcrust is sweetened with honey.
Swaps
Spelt flour → wheat flour. Honey → maple syrup. Raspberries → strawberries. Butter → coconut oil (gives a firm dough).
Cooking tips
Keep the dough cold so the fingers hold their shape while baking. Press the almonds firmly into the dough, or they'll fall out in the oven.
Storage
Without the raspberry purée, they keep for 1 week in a tin; add the purée on the day you serve them.
Allergens
Contains gluten (spelt), milk, egg and almonds (tree nuts). Because of the honey, not suitable for babies under 1 year old; fine in pregnancy.
