Speedy tofu scramble on wholegrain bread

Speedy tofu scramble on wholegrain bread: a savoury, quick everyday recipe with smoked tofu, red onion, garlic, turmeric and olive oil.

At a glance

Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Finely dice the red onion and garlic. Toast the wholegrain bread now so everything comes together straight away later.
  2. Heat the olive oil in a frying pan and briefly cook the red onion with the garlic until translucent. Both should soften but not darken.
  3. Roughly crumble the smoked tofu with your hands or a fork and add it to the pan. Fry briefly so it takes on the flavours.
  4. Sprinkle over the turmeric, add salt and mix everything well. Keep frying the tofu until evenly coloured and slightly crisp at the edges.
  5. Take the pan off the heat and quickly season the scramble to taste. That keeps the texture moist rather than dry.
  6. Pile the tofu scramble onto the toasted wholegrain bread and serve warm straight away.

Good to know

When it has to be quick, this is a slice of bread that still tastes like a proper meal. Warm, savoury and on the plate in a few minutes.

Swaps

Smoked tofu → plain tofu (usually a little milder and often slightly less salt). Wholegrain bread → rye bread (often more fibre). Olive oil → avocado oil (similar fatty acid profile, more neutral in flavour). Red onion → shallot (milder).

Allergens

Contains soya and gluten; generally suitable for children if the seasoning stays mild, and fine to eat during pregnancy as long as the tofu is well heated and handled hygienically.
