Ingredients

Method

You’ll need: blender · stick blender · knife

  1. Put the frozen strawberries in a blender or a tall container for a stick blender.
  2. Add the skyr, honey and the splash of almond milk.
  3. Blend everything vigorously on the highest setting until the ice cream is creamy with no lumps left.
  4. If the blade spins freely, switch off briefly, push the mixture down with a spoon and carry on blending.
  5. Spoon the ice cream into two bowls and eat it straight away, while it's firm and cold.

Good to know

You don't need an ice-cream maker for fresh fruit ice cream. Icelandic skyr brings protein to a cold snack.

Swaps

Skyr → low-fat quark (the texture will be the same, but low-fat quark tastes noticeably more sour than Icelandic skyr).

Cooking tips

Really do use frozen fruit. If you use fresh fruit and ice cubes, the mixture turns watery and immediately loses its creamy texture.

Storage

If you freeze the ice cream in the freezer, it turns rock hard. It tastes best as a quick, soft nice cream straight from the blender.

Allergens

Contains milk and tree nuts (almonds in the almond milk). Gluten-free. Honey isn't suitable for babies under 1 year old.
