Ingredients
1 small block of firm tofu or tempeh
1 splash of hot water
½ cucumber
1 raw carrot
Juice of 1 unwaxed lime
Salted peanuts, to top
¼ red cabbage
1 tbsp maple syrup
2 tbsp peanut butter
1 tsp sriracha (without added sugar)
1 handful of spring onions and fresh coriander
2 tbsp soy sauce
Method
You’ll need: chopping board · knife
Prepare the tofu or tempeh and cut it into bite-sized pieces. Thinly slice or shred the cucumber, carrot and red cabbage, and slice the spring onions into rings.
For the dressing, stir the peanut butter, soy sauce, lime juice, maple syrup, sriracha and hot water until smooth. It should be creamy but still easy to pour.
Roughly chop the coriander and put it in a bowl with the cucumber, carrot, red cabbage and spring onions. Arrange the tofu or tempeh on top.
Pour the sesame and peanut dressing over the bowl and toss everything loosely so the vegetables stay crunchy. If you like, season with a little more lime juice or sriracha.
To serve, top with salted peanuts and fresh coriander. Eat straight away, while everything is fresh and juicy.
Good to know
This is what a hot day tastes like when it slows down a little. Crunchy, creamy and with just the kind of heat that gets your attention.
Swaps
Tofu → tempeh (more protein)
Maple syrup → date paste (less free sugar, fuller flavour)
Sriracha → fresh chilli + lime juice (no additives, fresher)
Salted peanuts → roasted edamame or cashews (more protein, or milder; both contain minerals)
Allergens
Contains soya and peanuts; sriracha can be too hot for children, and during pregnancy well-washed herbs and pasteurised tofu or tempeh are the safe choice. Contains: gluten (soy sauce).
Frequently asked questions
What's the difference in nutrients between tofu and tempeh?
Both provide protein from soya. Tempeh is fermented and usually contains a little more fibre, while tofu is often milder and softer.
Which nutrients are in red cabbage and carrot?
Red cabbage provides vitamin C and anthocyanins, and carrot mainly beta-carotene. Both also bring fibre and various plant compounds.
Does peanut butter make sense nutritionally?
100% peanut butter provides unsaturated fats, vitamin E, magnesium and some protein. It's rich and also high in energy.
Does everyone tolerate soy sauce well?
Not always: it contains a lot of salt and can be an issue for sensitive people or on a low-histamine diet. People react differently to fermented soy sauces.
Does coriander add much nutritionally?
Coriander provides small amounts of vitamin K and some plant compounds. In the bowl, it's mainly there for its fresh flavour.
