Method

You’ll need: saucepan · chopping board · knife · wooden spoon

  1. Wash the orange in hot water and slice it.
  2. Heat the apple juice, water, cinnamon stick and cloves in a pan and let everything infuse over a low heat for 10 minutes.
  3. Stir in the sea buckthorn juice and honey and warm the punch for another 2 minutes without letting it boil.
  4. Remove the cinnamon stick and cloves and add the orange slices to the punch.
  5. Pour the punch into heatproof glasses and put an orange slice in each glass.

Good to know

Sea buckthorn grows on the Baltic coast and tastes so sour that hardly anyone drinks the juice undiluted. In hot apple juice with honey, it becomes a punch with a fruity tang. In the glass, it glows orange.

Swaps

Sea buckthorn juice → redcurrant juice (milder). Honey → maple syrup (vegan). Apple juice → pear juice. Cloves → 1 star anise.

Cooking tips

Only add the sea buckthorn at the end and don't let the punch boil, so the tang stays fresh. Use unsweetened pure juice, not a sweetened sea buckthorn drink.

Storage

Keeps cooled in the fridge for 3 days; only heat it, don't boil it.

Allergens

Vegetarian, gluten-free, no milk, egg, nuts or caffeine. Suitable for children over one year old and in pregnancy.
