Ingredients
2 slices of bread
100 g cottage cheese
50 g radishes
1 tsp chives
1 pinch of salt
Method
You’ll need: frying pan · chopping board · knife
Wash the radishes thoroughly and slice them thinly. Snip the chives into small pieces.
Toast the bread until crisp on the outside and still slightly soft inside.
Spread the cottage cheese evenly over the warm slices of bread.
Arrange the radish slices on top and season everything with 1 pinch of salt.
Sprinkle the chives over the bread and press them down lightly so they stick.
Serve the protein bread as soon as it's topped, while the bread is still warm and the radishes are nice and crunchy.
Good to know
When it needs to be quick, a savoury open sandwich like this is simply worth its weight in gold. Creamy, crunchy and pleasantly fresh. Just the thing for an easy plate.
Swaps
Cottage cheese → cottage cheese made from sheep's or goat's milk (similar protein content, different flavour); radishes → cucumber (milder, juicy); chives → parsley (more vitamin K); bread → wholegrain sourdough bread (often a little more fibre and a stronger flavour)
Allergens
Contains gluten and milk. Usually suits children if the radishes aren't too peppery for them, and in pregnancy it's generally fine with fresh, well-chilled cottage cheese made from pasteurised milk.
