Ingredients

Method

You’ll need: frying pan · mixing bowl · sieve · spatula

  1. Put the cottage cheese in a fine sieve and leave it to drain well. This makes the mixture firmer later and easier to shape.
  2. Whisk the eggs in a bowl and stir in the drained cottage cheese. Fold in the oats and finely snipped chives.
  3. Season the mixture with salt and pepper and leave it to rest briefly in the fridge. This lets the oats absorb some liquid.
  4. Heat the olive oil in a non-stick frying pan. Spoon small patties of the mixture into the pan and fry over a medium heat.
  5. Turn the patties as soon as the underside is golden brown and finish cooking. They should be coloured on the outside and just set inside.
  6. Serve the cottage cheese patties warm, for example with a green salad, cucumber or a dollop of yoghurt dip.

Good to know

When it needs to be quick, these patties are just right. Golden brown outside, juicy inside and pleasantly savoury. A recipe that doesn't need much effort.

Swaps

Oats → fine spelt flakes (a little nuttier in flavour; contain gluten); Chives → parsley (also provides vitamin C and folate); Olive oil → ghee (heat-stable, stronger flavour; contains milk); Cottage cheese → skyr (similar protein content, but the mixture will be a little softer)

Allergens

Contains milk, egg and gluten (oats) unless labelled gluten-free. Usually well suited to children if mildly seasoned; in pregnancy, fine with fresh ingredients as long as the patties are cooked until the egg is set.
