Ingredients
1 roll of fresh shortcrust pastry (all-butter, without added sugar or seed oils, or homemade)
3 firm, tart apples
3 tbsp coconut sugar
½ tsp vanilla extract
4 tbsp almonds
1 tbsp butter
1 lemon (for the lemon juice)
1 tsp cinnamon
Method
You’ll need: oven · chopping board · knife
Preheat the oven to 200 °C (180 °C fan) and roll out the fresh shortcrust pastry on baking paper.
Core the apples, cut them into thin wedges and toss with the coconut sugar, vanilla extract, cinnamon and lemon juice.
Arrange the apple wedges in the middle of the pastry, leaving a wide border free. Loosely fold the border over the filling.
Dot the apples with small pieces of butter and scatter the slivered almonds over the apples and pastry edge.
Bake the galette at 200 °C for 30–35 min, until the pastry is golden brown and crisp and the apples are soft.
Best served warm. A little natural yoghurt or a spoonful of whipped cream goes well with it.
Good to know
Sometimes all you need is a golden pastry edge and soft baked apples. This galette is uncomplicated, smells of a warm oven and looks lovely without any perfection.
Swaps
Fresh shortcrust pastry → spelt shortcrust pastry made with butter (a little more fibre); butter → ghee (buttery flavour, hardly any lactose)
Allergens
Contains gluten, milk and tree nuts; well suited to children if the apples are baked until soft, and uncritical during pregnancy as long as all ingredients are fresh and handled cleanly.
