Ingredients

Method

You’ll need: saucepan

  1. Bring the water to the boil, add the teabags and leave the tea to steep for 6 min. Take out the teabags.
  2. Squeeze two mandarins. Peel the remaining ones and divide them into segments.
  3. Slit the vanilla pod lengthways and heat it with the tea, apple juice, mandarin juice and cinnamon stick over a low heat for 8 min, without letting the punch boil.
  4. Take out the vanilla and cinnamon and stir in the maple syrup.
  5. Divide the mandarin segments between heatproof glasses with handles and pour the hot punch over them.

Good to know

Rooibos tastes naturally a little sweet and of vanilla, so this punch needs hardly any sweetening. It has no caffeine, so it suits the evening and children too. And in winter there are mandarins in every fruit bowl.

Swaps

Rooibos tea → honeybush tea. Mandarins → 1 orange. Maple syrup → honey (not for babies under one year old). Vanilla pod → 1 tsp vanilla extract.

Cooking tips

Only squeeze the mandarins just before heating so the juice stays fresh. Don't let the punch boil.

Storage

Without the fruit, 3 days in the fridge; only warm it up, don't boil.

Allergens

Vegan, gluten-free, no milk, egg, nuts or caffeine. Suitable for children and in pregnancy.
