Rooibos chai made from rooibos tea, oat milk and honey with cinnamon, cardamom, ginger, cloves and star anise. Caffeine-free and vegetarian, a hot drink alongside tea and juices for winter evenings.
You’ll need: saucepan · chopping board · knife · sieve · wooden spoon · whisk
Classic chai is brewed with black tea and contains caffeine. With rooibos, it tastes just as well spiced and suits the evening too. Toast the spices briefly first so they're more fragrant.
Oat milk → milk (also provides protein; no longer dairy-free). Honey → maple syrup (vegan). Rooibos tea → black tea (classic chai with caffeine). Peppercorns → 1 pinch of nutmeg.
Don't let the chai boil once the oat milk is in, or it will curdle. For more froth, use a barista oat milk (choose one without seed oils).
Keep the spiced tea without the oat milk in the fridge for 3 days and heat it fresh with the oat milk.
Contains oats (gluten, unless the oat milk is labelled gluten-free); no milk, egg or nuts. Caffeine-free and suitable in pregnancy; no honey for babies under one year old.
