Roasted squash and feta salad with pumpkin seed oil
Roasted squash and feta salad with pumpkin seed oil: oven-roasted squash, feta, spinach, chilli and pumpkin seeds make a hearty salad with a nutty dressing.
Wash the squash, spinach and chilli. Deseed the squash and cut it into bite-sized pieces, and finely chop the chilli.
Toss the squash with olive oil, salt lightly and roast on a baking tray in the oven at 200 °C (180 °C fan) for 20–25 min, until soft and browned at the edges.
Toast the pumpkin seeds briefly in a dry frying pan until fragrant. Roughly crumble the feta.
Stir the olive oil, apple cider vinegar, chilli and a little pepper into a dressing. Put the spinach in a bowl and toss it loosely with the dressing.
Fold the warm squash into the spinach and scatter the feta and toasted pumpkin seeds over the top. Let everything sit briefly so the flavours come together.
Arrange on plates and finish with a little pumpkin seed oil to serve.
Good to know
A salad like this takes little effort but still feels special. Warm, salty, nutty and with a bit of heat – exactly the kind of plate that's satisfying and leaves you content.
Swaps
Feta → goat's cheese (often a little more protein and a stronger flavour). Spinach → rocket (more bitter notes and a peppery heat). Olive oil → avocado oil (milder flavour and a similarly high share of monounsaturated fats). Pumpkin seeds → walnuts (also provide fibre and omega-3 fatty acids; contain tree nuts).
Allergens
Contains milk from the feta; for small children, better to make it mild because of the chilli. In pregnancy it's a good fit if pasteurised feta is used.
