Ingredients
100 g soft dates
50 g almonds
2 tbsp almond butter
2 tbsp cocoa powder
1 pinch of sea salt
Method
Grind the almonds coarsely in a food processor until you have a crumbly base.
Add the dates and blend briefly so everything combines evenly.
Work in the cocoa powder, almond butter and sea salt until you have an even mixture you can shape. Scrape the mixture down from the sides in between if needed.
With slightly damp hands, shape into even balls and press them firmly together.
Put the truffles in the freezer briefly so they firm up.
Serve chilled and roll them in a little more cocoa powder before serving if you like.
Good to know
These little truffles are quick to make and taste pleasantly deep of cocoa. Just right when you want something sweet on your plate without much effort.
Swaps
Almonds → hazelnuts (similarly nutty, provide unsaturated fats and vitamin E). Almond butter → cashew butter (milder flavour, brings fat and some magnesium). Soft dates → dried figs (more fibre, a slightly different sweetness). Cocoa powder → raw cacao powder (more intense flavour, also contains polyphenols).
Allergens
Contains tree nuts, so it's not suitable for people with a nut allergy. For children only when age-appropriate because of the firm texture; during pregnancy generally fine as long as the ingredients agree with you.
