Ingredients

Method

You’ll need: knife · mixing bowl · mandoline

  1. Wash the courgette and cucumber thoroughly and pat them dry if needed. You can leave the skin on.
  2. Slice the courgette and cucumber wafer-thin with a mandoline or knife. The thinner the slices, the more delicate the carpaccio.
  3. Spread the slices loosely, slightly overlapping, on a plate or platter.
  4. Stir the olive oil and lemon juice together in a small bowl and pour the marinade evenly over the courgette and cucumber.
  5. Scatter the hemp seeds over the top and let the carpaccio infuse briefly.
  6. Serve straight away, ideally well chilled. Season with a little salt at the table if you like.

Good to know

A plate like this is wonderfully simple and still special. Cool, fresh and with a delicate texture – just right when you want something light.

Swaps

Hemp seeds → walnuts (more omega-3 fatty acids) | lemon → lime (similarly fresh, a slightly different flavour) | cucumber → fennel (more fibre, stronger flavour) | olive oil → avocado oil (mild, with monounsaturated fats)

Allergens

Hemp seeds are not one of the main allergens, but like other seeds they can cause reactions in some people. The recipe is generally suitable for children, and in pregnancy it's fine with thoroughly washed, fresh vegetables.
