Quick vegetable fried rice with egg and sesame
Quick vegetable fried rice with egg and sesame: savoury fried rice with carrots, peas, spring onions, ginger and soy sauce – ideal for cooked rice from the day before.
Dice the carrot small. Separate the white and green parts of the spring onions and slice both into rings. Finely chop the garlic and grate the ginger.
Whisk the eggs and let them set briefly in a hot frying pan with the olive oil to make soft scrambled egg. Take it out and set aside.
Add the sesame oil to the pan and briefly fry the carrot, the white parts of the spring onions, the garlic and ginger over a high heat. Add the peas and fry them too.
Add the rice to the pan, spread it out and let it brown briefly without stirring. Then turn it and keep frying until it's hot and crisp in places.
Fold in the soy sauce and scrambled egg and toss everything briefly.
Divide between bowls and serve with the green parts of the spring onions and the sesame seeds.
Good to know
A dish like this is a reliable answer to a tired-looking fridge. Warm, full of flavour and on the table in no time – without much effort.
Swaps
Sesame oil → olive oil (mainly monounsaturated fatty acids); rice → brown rice (also provides fibre and minerals); peas → edamame (also provide protein and fibre); soy sauce → tamari (gluten-free alternative with a similar flavour)
Allergens
Contains egg, sesame, soya and gluten (soy sauce); tamari is a gluten-free alternative. With little soy sauce and gently fried, it's often good for children too. In pregnancy, heat it through well and cook the egg until firm; always keep leftover rice properly chilled.
