Wash the courgettes and turn them into courgette noodles with a spiralizer. Finely chop the onion and garlic.
Heat the olive oil in a frying pan and fry the turkey mince until crumbly and lightly browned.
Add the onion and garlic and fry briefly until soft and fragrant.
Stir in the passata and oregano. Season to taste with sea salt and black pepper and simmer gently for a few minutes.
Warm the courgette noodles briefly in a second frying pan so they stay al dente and don't release too much water.
Divide the courgette noodles between plates and spoon the turkey bolognese over the top.
Good to know
When you need something fast, this dish is a reliable classic. Hearty, light and just right for a busy day.
Swaps
Turkey mince → chicken mince (similar protein content and mild in flavour); courgettes → shirataki noodles (almost no carbs); passata → chopped tomatoes from a jar (more texture); olive oil → ghee (heat-stable with a rich flavour; contains milk, so not dairy-free)
Allergens
The recipe is naturally gluten-free and dairy-free, and the common allergens don't feature here. For children you can use less garlic; in pregnancy it's a good choice as long as the turkey mince is cooked right through.
