Ingredients
350 g rump steak
200 g jasmine rice
2 handfuls of Thai basil
3 cloves of garlic
2 chillies
1 onion
1 tbsp coconut oil
1 pepper
1 tsp sesame oil
1 pinch of black pepper
3 tbsp soy sauce
1 tbsp oyster sauce (without added sugar)
Method
You’ll need: wok · chopping board · knife
Cook the jasmine rice for 12–15 min. Cut the rump steak across the grain into very thin strips.
Finely chop the garlic, slice the chillies into rings, cut the onion into wedges and the pepper into strips. Roughly pick the Thai basil leaves.
Heat the coconut oil in a wok until very hot and sear the beef quickly over a high heat until it takes on colour. Then take it out of the wok.
Fry the onion, pepper, garlic and chilli in the same wok over a high heat for 2–3 min. That way the veg stays crisp and picks up a roasted flavour.
Return the beef to the wok and toss with the soy sauce, oyster sauce, sesame oil and black pepper. Finally fold in the Thai basil until it wilts slightly.
Serve on the jasmine rice and eat straight away while hot.
Good to know
When it needs to be quick, this is one of those dishes that tastes like a proper meal straight away. Hot, spicy, juicy – and ready in a few minutes.
Swaps
Rump steak → chicken breast (a little milder, similar protein content); jasmine rice → brown rice (more fibre); oyster sauce → gluten-free tamari plus a little mushroom powder (no oysters, still savoury); coconut oil → avocado oil (similarly stable at high heat, milder in flavour)
Allergens
Contains soya, and molluscs from the oyster sauce. The chilli may be too hot for children; during pregnancy the dish is generally fine as long as the beef is served fully cooked through. Contains: gluten (soy sauce), sesame, soya, molluscs.
