Quick spelt pancakes with blueberries
Quick spelt pancakes with blueberries: fluffy, moist and easy for any weekday. With wholemeal spelt flour, eggs, milk, maple syrup and warm blueberries.
Whisk the eggs thoroughly with the milk and maple syrup in a bowl. Add the wholemeal spelt flour, baking powder and salt and stir into a smooth batter.
Heat a non-stick frying pan with a little coconut oil over a medium heat. Add the batter in portions and spread it out into rough circles.
Cook the pancakes until bubbles appear on the surface and the edges firm up. Then flip carefully and cook the second side until golden brown.
Meanwhile, warm the blueberries briefly in a small saucepan until they start to burst and release some juice. That way they become softer and more flavourful.
Take the finished pancakes out of the pan one at a time and keep them warm until all the batter is used up.
Stack the pancakes on plates, spoon over the warm blueberries and serve with a little maple syrup if you like.
Good to know
These pancakes are uncomplicated and on the table quickly. They taste warm, soft and pleasantly nutty. The warm blueberries make them especially cosy.
Swaps
Milk → natural yoghurt with a little water (more protein, creamier texture); maple syrup → date paste (adds a little fibre); coconut oil → ghee (stable at high heat, buttery flavour); blueberries → raspberries (more fibre, a little tarter)
Allergens
Contains gluten, egg and milk; generally suitable for children if the pancakes are cooked through, and also a normal choice during pregnancy, as long as the eggs are fully cooked and the dairy products are pasteurised.
