Ingredients

Method

You’ll need: saucepan · stick blender · chopping board · knife · sieve

  1. Bring plenty of water to the boil and cook the tapioca pearls in it for just under 15 minutes until translucent.
  2. Rinse the pearls in a sieve under cold water so they don't stick together.
  3. Peel the mango, cut the flesh away from the stone and blend it with the lime juice.
  4. Stir the cooled tapioca pearls into the coconut milk and oat milk.
  5. Layer the mango purée and the tapioca mixture alternately in two glasses.

Good to know

A tropical holiday by the spoonful. This classic of Asian cooking combines sweet fruit with creamy coconut milk and fun little pearls.

Swaps

Mango → papaya (if you don't like mango, papaya has a similarly soft texture and a lovely bright colour).

Cooking tips

Stir regularly while the tapioca pearls are cooking. Otherwise the little balls stick to the bottom of the pan very quickly.

Storage

The finished dessert keeps for one to two days in the fridge, although the pearls can firm up a little over time.

Allergens

Contains gluten (oat milk, unless labelled gluten-free). Lactose-free and vegan.
