Ingredients
400g frozen mango
100ml passion fruit juice (unsweetened)
1 unwaxed lime
2 tbsp maple syrup
Method
You’ll need: high-speed blender
Let the frozen mango thaw slightly so it's easier to blend.
Squeeze the lime and set the juice aside.
Put the frozen mango, passion fruit juice, lime juice and maple syrup into a powerful blender or food processor.
Blend everything until creamy and no pieces of fruit are left. If needed, help it along now and then with the tamper or a spatula.
For a firmer texture, put the mixture in the freezer briefly until it's easier to shape.
Serve immediately or scoop into balls after a short time in the freezer.
Good to know
When it's warm outside, this is exactly the dessert I want. Fruity, ice-cold and made without much effort. It tastes clear, fresh and pleasantly intense.
Swaps
Maple syrup → date paste (adds a little fibre) | passion fruit juice → orange juice (also contains vitamin C) | lime → lemon (similarly fresh acidity) | frozen mango → frozen pineapple (also provides vitamin C)
Allergens
The sorbet is naturally dairy-free, egg-free and gluten-free; it usually suits children well, if you have a sensitive stomach the acidity of the lime and passion fruit can be a little intense, and during pregnancy the ingredients are common and unproblematic.
