Ingredients
400 g chicken breast
1 tbsp sesame oil
1 tbsp honey
2 cloves of garlic
1 tbsp gochujang (Korean chilli paste, without added sugar)
1 head of lettuce (iceberg or romaine)
100 g red cabbage
50 g kimchi
1 spring onion
1 tbsp sesame seeds
1 tbsp rice vinegar
1 tsp ginger
3 tbsp soy sauce
Method
You’ll need: frying pan · chopping board · knife
Cut the chicken breast into thin strips. Stir the soy sauce, sesame oil, honey, garlic, ginger and gochujang into a marinade and let the chicken sit in it briefly.
Mix the red cabbage with the kimchi, spring onion and rice vinegar. Leave the slaw for a moment so it softens a little and the flavours come together.
Heat a large frying pan until very hot. Fry the marinated chicken in batches until browned and cooked all the way through.
Carefully separate the large leaves from the lettuce and get them ready as wraps or cups. Pat them dry if needed so they hold together.
Put the chicken in the lettuce leaves and spread the kimchi slaw on top. Finish with sesame seeds.
Serve straight away and eat with your hands.
Good to know
When things need to be quick but should still taste like proper food, this is my go-to. Spicy, fresh and nicely crunchy – without much effort.
Swaps
Chicken breast → skinless chicken thighs (a little juicier, a bit more iron) | Honey → date paste (less free sugar, a little more fibre) | Lettuce → romaine lettuce (sturdier, a bit more bite) | Soy sauce → tamari (gluten-free if labelled as such)
Allergens
Contains soya and sesame. Depending on the product, kimchi can contain fish sauce or a lot of heat, so season more mildly for children; during pregnancy, choose pasteurised or hygienically made kimchi. Contains: gluten (soy sauce).
