Ingredients

Method

You’ll need: chopping board · knife · mixing bowl

  1. Put the cream cheese into a bowl and stir until smooth with a fork or spoon.
  2. Mix the horseradish and lemon juice into the cream cheese until everything is evenly combined.
  3. Finely snip the chives and fold them in.
  4. Season the spread to taste with salt and pepper. If you like it stronger, stir in a little more horseradish.
  5. Leave to stand briefly so the flavours come together.
  6. Serve on fresh bread, with baked potatoes or as a dip. Kept well sealed in the fridge, the spread stays fresh for a few days.

Good to know

A spread like this is on the table in five minutes and tastes like more than just 'quickly made'. Creamy, fresh and with just the kick that wakes up your taste buds.

Swaps

Cream cheese → soft goat's cheese (often a little tangier, also provides protein). Horseradish → mustard made without refined sugar (milder heat, depending on the type a little less pungent). Chives → parsley (more vitamin K and a fresher herb flavour). Lemon juice → cider vinegar (a tangy note; small amounts traditionally work well in cold spreads).

Allergens

Contains milk from the cream cheese; horseradish can be quite hot for children, and during pregnancy the spread is generally fine with fresh, clean ingredients.
