Ingredients
- 250 g spaghetti
- 250 g prawns
- 4 cloves of garlic
- 3 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp chilli flakes
- ½ bunch of parsley
- 1 pinch of salt
- 1 pinch of pepper
Method
You’ll need: frying pan · saucepan · sieve
- Cook the spaghetti in salted water until al dente. Save a little of the pasta water and drain the pasta.
- Warm the olive oil in a large frying pan. Fry the garlic and chilli flakes briefly until fragrant but not dark.
- Add the prawns to the pan and fry briefly until they are just cooked through and pink. Don't cook them too long so they stay juicy.
- Add the spaghetti and toss with the lemon juice and a little pasta water. Mix everything until the pasta is coated in a thin, glossy sauce.
- Season to taste with salt, pepper and parsley. Stir in a little more olive oil if needed.
- Divide between plates and serve straight away. If you like, finish with extra parsley and a squeeze of lemon.
