Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · sieve

  1. Cook the soba noodles in boiling water according to the packet instructions. Drain and refresh them in cold water so they don't stick together.
  2. Cut the red pepper into thin strips. Put it in a large bowl with the edamame.
  3. Stir the soy sauce, rice vinegar and sesame oil together in a small bowl or jar until smooth. That's your simple, savoury dressing.
  4. Add the cooled soba noodles to the veg. Mix everything thoroughly with the dressing.
  5. Sprinkle the sesame seeds over the top. If you like, leave the bowl to stand briefly so the flavours come together.
  6. To serve, divide the edamame soba noodle bowl between bowls and enjoy straight away.
