Ingredients

Method

You’ll need: frying pan · chopping board · knife · wooden spoon

  1. Wash the courgettes and cut them into bite-sized pieces. Peel and finely chop the onion and garlic, and dice the feta.
  2. Heat the olive oil in a large frying pan and soften the onion until translucent. Add the beef mince and fry, breaking it up, until browned.
  3. Stir in the garlic, paprika and oregano and fry briefly, stirring well so the spices don't darken.
  4. Add the courgette to the pan, season with salt and pepper and mix everything well. Cover and cook briefly until the courgette is soft but still has a little bite.
  5. Turn off the heat and carefully fold in the feta. The residual heat is enough to make it slightly creamy.
  6. Serve piping hot. If you like, add a little more oregano or a small splash of olive oil.

Good to know

This is on the table fast and still feels like proper cooking. Savoury, juicy and with a creamy note at the end. Just right for days when things can be uncomplicated.

Swaps

Feta → goat's cheese (also provides protein and calcium) | Beef mince → chicken mince (usually a little leaner, still plenty of protein) | Courgette → aubergine (more fibre per serving) | Olive oil → ghee (heat-stable and aromatic)

Allergens

Contains milk (feta); good for children if mildly seasoned, and fine in pregnancy as long as the mince is cooked right through and the feta is made from pasteurised milk.
