Ingredients
300g chicken breast
2 wholemeal wraps
4 tbsp hummus
50g rocket
1/2 cucumber
1 tbsp olive oil
1 tbsp lemon juice
1 pepper
1 tsp cumin
1 tsp paprika
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Cut the chicken breast into thin strips and season with cumin, paprika, salt and pepper.
Heat the olive oil in a frying pan and fry the chicken over a fairly high heat until golden brown and cooked through.
Cut the pepper into strips, slice the cucumber and have the rocket ready. Warm the wraps briefly in a dry frying pan.
Spread the wraps with hummus and top with rocket, pepper and cucumber. Divide the fried chicken over the top and finish with lemon juice.
Roll up the wraps tightly and halve them if needed.
Serve fresh, or wrap tightly in foil to take with you.
Good to know
When it needs to be quick, these wraps are just right. Warm, crunchy and pleasantly satisfying. A meal like this often saves lunch or dinner.
Swaps
Chicken breast → turkey breast (similar protein content and usually a little milder in flavour); wholemeal wraps → lettuce leaves or nori sheets (fewer carbs); hummus → mashed avocado with lemon juice (more monounsaturated fatty acids); cucumber → finely sliced red cabbage (more fibre and extra plant compounds).
Allergens
Contains gluten from the wraps and may contain sesame if the hummus is made with tahini; well suited to children when mildly seasoned, and fine during pregnancy with chicken that's cooked all the way through.
