Quick chicken wholemeal wrap
Quick chicken wholemeal wrap with chicken breast, a wholemeal tortilla, plain cream cheese and crunchy lettuce – an easy recipe for when you're short on time.
Pat the chicken breast dry and season with salt and pepper. Wash the lettuce, drain well and cut it into thin strips.
Melt the butter in a frying pan over a medium heat. Fry the chicken breast on both sides until cooked through and lightly browned on the outside.
Let the chicken rest briefly, then slice it into strips. Warm the wholemeal wrap briefly according to the packet instructions so it's pliable.
Spread the cream cheese over the wholemeal wrap. Arrange the lettuce and chicken strips on top and season with a little pepper to taste.
Fold in the sides slightly and roll the wrap up tightly. If you like, put it seam side down in the warm pan for a moment.
Serve the quick chicken wholemeal wrap warm straight away.
Good to know
When it needs to be quick, a wrap like this is just pleasantly easy. Warm, crunchy and satisfying without feeling heavy.
Swaps
Plain cream cheese → skyr-based cream cheese (more protein, usually less fat); butter → ghee or olive oil (heat-stable, or mainly monounsaturated fats); iceberg lettuce → romaine or baby spinach (usually a little more folate and carotenoids); wholemeal wrap → wholemeal spelt wrap (similar fibre content, slightly different flavour)
Allergens
Contains gluten and milk. Well suited to children if the chicken is fully cooked and only mildly seasoned; during pregnancy the recipe is also fine with thoroughly cooked meat and fresh, well-washed ingredients.
