Pat the chicken breast dry and cut it into thin strips. Wash the cucumber and red pepper and cut them into thin pieces; have the lamb's lettuce or rocket ready.
Gently heat the olive oil in a frying pan. Brown the chicken on all sides and season with salt, pepper and a little paprika.
Keep cooking the chicken until it is cooked through inside and lightly browned outside. Then take the pan off the heat briefly.
Warm the wholemeal tortilla wrap briefly in a dry frying pan or in the oven so it rolls more easily. Spread the natural yoghurt over it.
Spread the cucumber, red pepper and lamb's lettuce or rocket over the wrap. Add the warm chicken and roll everything up tightly.
Serve the wrap straight away, halved if you like, and enjoy it while still warm.
Good to know
When it needs to be quick, a wrap like this is worth its weight in gold. Warm chicken, crunchy veg and a fresh dollop of yoghurt keep it nice and easy.
Swaps
Natural yoghurt → Greek yoghurt (a little more protein, creamier) | wholemeal tortilla wrap → spelt wrap (nuttier flavour; seed-oil-free) | chicken breast → turkey breast (similar protein content) | lamb's lettuce or rocket → baby spinach (milder flavour, also provides folate)
Allergens
Contains milk (natural yoghurt) and gluten (wholemeal wrap). Well suited to children if mildly seasoned and cut into small pieces; in pregnancy it's fine as long as the chicken is cooked right through and the yoghurt is pasteurised.
