Ingredients
350g chicken breast fillet
4 tbsp hummus (made with olive oil, no seed oils)
100g cherry tomatoes
1/2 cucumber
80g lamb's lettuce
1 tbsp olive oil
1 tbsp lemon juice
1 pinch of sea salt
1 pinch of black pepper
Method
You’ll need: frying pan · chopping board · knife
Season the chicken breast fillet with sea salt and black pepper.
Heat the olive oil in a frying pan and fry the chicken over a medium to slightly higher heat until golden brown on both sides and cooked through. Leave it to rest briefly so it stays juicy.
Halve the cherry tomatoes, cut the cucumber into half-moons and wash the lamb's lettuce thoroughly.
Slice the chicken diagonally.
Divide the lamb's lettuce, cucumber and cherry tomatoes between two bowls. Add the hummus and lay the chicken slices on top.
Drizzle with lemon juice and serve straight away.
Good to know
A meal like this hits the spot when it needs to be quick but should still taste like a real meal. Fresh and without much effort in the kitchen.
Swaps
Chicken breast → turkey breast (similar protein content). Lamb's lettuce → rocket (a little stronger in flavour, also provides folate). Hummus → mashed white beans with olive oil and lemon (also provide fibre, milder flavour). Olive oil → avocado oil (heat-stable, mainly monounsaturated fats).
Allergens
The recipe is naturally gluten-free and contains sesame (hummus). Usually well suited to children if mildly seasoned; in pregnancy, cook the chicken right through and wash the salad thoroughly.
