Quick chicken gyros with tzatziki
Quick chicken gyros with tzatziki: spiced chicken breast, Greek yoghurt, cucumber, garlic and fresh salad – high-protein, uncomplicated and easy for every day.
Cut the chicken breast into thin strips and mix thoroughly with the oregano, paprika, cumin, salt and black pepper. Leave for a moment so the spices cling to the meat.
For the tzatziki, grate the cucumber and squeeze it out well. Stir it into the Greek yoghurt with the garlic, lemon juice, salt and black pepper, then chill until serving.
Wash the iceberg lettuce and cut it into strips. Slice the tomatoes and set aside until you plate up.
Heat the olive oil in a frying pan and fry the spiced chicken over a high heat until golden brown and no longer pink inside.
Taste the tzatziki again and balance it with a little salt, pepper or lemon juice if needed.
Arrange the gyros chicken on plates with the iceberg lettuce, tomatoes and a dollop of tzatziki. If you like, serve it in warm flatbread or a wrap as well (choose one without seed oils).
Good to know
When it needs to be quick, this chicken gyros is right up my street. Lots of flavour, little effort, and you end up with a plate that's fresh and hearty.
Swaps
Chicken breast → skinless chicken thighs (a little juicier, a little more iron) | Greek yoghurt → skyr (more protein, thicker texture) | iceberg lettuce → romaine lettuce (a little more folate and fibre) | olive oil → avocado oil (heat-stable, with monounsaturated fats)
Allergens
Contains milk (yoghurt). Flatbread or wraps, if you serve them, contain gluten. Usually fine for children if you go easy on the garlic; in pregnancy it's fine as long as the chicken is cooked right through.
